Mix 500g flour, 375 warm water, 100 starter, 12 salt
Let autolyse for 30 min
Stretch and fold 4 times 3 min apart
Allow dough to grow.
Once almost doubled in size, turn dough out to counter. Shape and put into banneton and into fridge for 12 hours.
Preheat Dutch oven to 500F.
Once oven is ready, put dough on parchment, score dough and place in Dutch over.
Lower heat to 450 and bake covered for 25 min.
After 25 min, remove cover, lower heat to 425, bake another 30 min.
